SMOKEHOUSE 19 Origin Story
Our beloved recipe is a generation old recipe passed on through the Small family of North Lubec, Maine.  This generation-old recipe was loved by all the locals and tourists alike, who traveled long distances for a chance to sample the fresh smoked regional North Atlantic Fish and fresh waters natives of the region. Amongst were, North Atlantic Salmon, Mackerel, Eel, Alewives, Trout.  

Back in 1969, I had the fortunate pleasure of meeting Wendell Small, who became my guide and mentor, and through hard work and perseverance, and my passion for smoked salmon, he eventually passed on his closely guarded family recipe to me.  From that moment on, I was sworn-in, so to speak, with preserving the integrity, of not only the smoking process, but most importantly, to guard his family’s beloved recipe to achieve perfectly smoked salmon, time and time again.


Today, we have kept our promise and continue smoking small batches of North Atlantic Salmon, delivering to you Salmon so delicately moist, flaky and delicious every time, whilst achieving the perfect balance between the Roast & Smoke of our North Atlantic Salmon,  retaining its delicate integrity of the salmon itself.
